The Muungano Cooperative operates 7 washing stations spread along the shores of Lake Kivu and in the hills of Kalehe. Each station is equipped to process coffee cherries according to best post-harvest practices:
- Mechanical pulping within 12 hours of harvest to preserve freshness
- Controlled fermentation in painted concrete tanks (24–36 hours depending on the season)
- Washing with running water from Lake Kivu — water of exceptional purity
- Drying on raised African tables for 21 to 30 days
- Integrated cupping laboratory for lot-by-lot quality control
The Chebumba station, the largest and most recent, has a processing capacity of 500 tonnes of cherries per season.
